Porcupine Meatballs

  • 2 1/2 lbs. ground chuck
  • 1 can diced tomatoes
  • 1/2 c. BBQ Sauce
  • 1 bell pepper cubed
  • 1 small onion cubed
  • 1 tsp salt
  • 1 large egg
  • 1/2 tsp fresh ground pepper
  • 1 c. cooked rice
  • 1/2 to 1 c plain breadcrumbs
  1. Preheat the oven to 400 degrees F.
  2. As you mix ingredients together, gradually add breadcrumbs. If you do not need the entire cup to bind the meat together then do not add them.  Too much will cause the meatball to be dry.
  3. Using a cookie scoop dip the hamburger mixture.  Gently, and quickly roll into balls and place on a cookie sheet.  You must not handle the meat too much or they will be tough when cooked.
  4. Bake meatballs for 15 minutes at 400 degrees F.
  5. After 15 minutes remove them and add BBQ sauce to each meatball.  Place back into the oven and cook for another 5 minutes.
  6. Allow meatballs to sit for 5 minutes before plating.
  7. If you have any leftovers, they are great for sliders and sandwiches the next day.
